Hospitality professional Hector Hernandez has been appointed general manager at The Original Ivy in Covent Garden.

Hernandez, who joined the restaurant in July 2025, brings more than 20 years’ experience across some of London’s best-known dining institutions. He began his fine dining career as a waiter at Alain Ducasse at The Dorchester in 2007 before moving to Le Gavroche two years later, where he advanced through the ranks.

He went on to become director of food and beverage at The Scarlet Hotel in Cornwall from 2014 to 2018, later holding senior management roles at Mayfair venues Amazonico and Quaglino’s.

Hernandez said his goal at The Ivy is to “restore the glamour and iconic flair” of the West Street restaurant while maintaining its reputation for service excellence. He added that he plans to build on the venue’s “celebrated old-school style” and ensure its continued relevance.

A long-time advocate for staff development, Hernandez has led teams in recruitment, new openings and diversity initiatives throughout his career.

Opened in 1917, The Original Ivy has long been regarded as one of London’s most recognisable dining rooms. The restaurant, known for its oak panelling, stained-glass windows and central dining bar, continues to serve seasonal menus and signature dishes from across its history.
