Dominus Hospitality has appointed Dimitri Liske as head chef for Rycrofte’s, the signature restaurant at The Derby London City, Curio Collection by Hilton.

Liske will oversee the culinary vision for the restaurant, coffeehouse, and bar ahead of its scheduled opening in March. 

The menus are inspired by Sir John Rycrofte, sergeant of the larder to Henry VII and Henry VIII, and will focus on modern interpretations of British classics using seasonal ingredients.

Liske joins the property from the Canary Riverside Plaza Hotel, where he served as head chef. 

His 15-year career includes senior roles at One Hundred Shoreditch, where he managed a brigade of 16 chefs, and M Restaurants. 

His international experience includes a tenure as head chef at Harisch Hotels in Austria and various positions in Australia, including roles at Asado Bar and Cantina 663 in Perth.

The Derby London City is located adjacent to St Dunstan-in-the-East. The hotel’s food and beverage offering will provide all-day dining across its three main outlets, with Liske responsible for menu development, recruitment, and kitchen management.

Liske said: “I am shaping an all-day dining experience that reimagines British classics with a modern twist. The menus will balance tradition and creativity, with fresh and locally sourced ingredients.
