Rudy’s Pizza Napoletana to open in Brighton

Rudy’s Pizza Napoletana, the Manchester-born pizza group, is set to open a new pizzeria in Brighton this Spring. 

The new pizzeria will serve pizzas cooked in just 60 seconds, using ingredients from Naples. 

Occupying the former Chilli Pickle site on Jubilee Square in the heart of Brighton’s North Laine, the new restaurant will feature Rudy’s signature minimalist and industrial-style decor in a 3,500 square-foot unit with approximately 160 covers for dining. 

Since launching in 2015 in Ancoats, Manchester, Rudy’s quickly gained a following for its Neapolitan dough and ingredients. Having taken on London, with pizzerias in Soho’s Wardour Street, Tottenham Court Road, Spitalfields and Shoreditch, the new opening will mark the brand’s 31st pizzeria in the country. 

The new Rudy’s Brighton will also bring opportunities for recruitment across 30 positions, with a particular focus on manager and skilled pizzaiolo roles. The employer also recently launched its dedicated Rudy’s pizzaiolo academy to teach both experienced chefs and 

first-time pizzaioli the Rudy’s “classic Neapolitan style”. 

Rudy’s follows the Neapolitan tradition of pizza-making, serving classic recipes such as marinara, margherita and calabrese, alongside paying homage to famous pizzerias around the globe with its rotating specials. 

Rudy’s signature dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours. The dough is then cooked in a Stefano Ferrara oven for around 60 seconds – resulting in a soft and light pizza with an airy and raised crust. Pizzas come topped with a variety of ingredients from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius.

Customers at the Brighton pizzeria can expect a concise selection of Rudy’s classics, alongside two rotating specials every six weeks, classic Italian desserts as well as a drinks menu featuring Italian spritzes and lagers from local breweries, and classic cocktails.
