Simon Bolsover joins Green Dragon Hotel as executive chef

The Green Dragon Hotel has appointed Simon Bolsover as its new executive chef.

Bolsover most recent roles included executive head chef at The Coniston Hotel and Seaham Hall Hotel and Spa having previously worked alongside Raymond Blanc and Keith Floyd.

Bolsover said he is now “excited to put down roots” in rural Herefordshire, which is “plentiful with local produce and gastronomy”.

A consortium-led project has seen the 83-bedroom boutique hotel restored to a “cool but classic” destination.

The hotel added that with Bolsover’s “passion and drive for gastronomic excellence”, diners will be able to enjoy a seasonal and locally-sourced dining experience at the property’s ‘Hereford’ restaurant.

Bolsover said: “Herefordshire is an amazing county for any chef to work in, on your doorstep, is such a rich larder of meat, drink and produce.

“It has been great to spend time with and champion local producers and I hope this shows in the menus we have developed. I am very excited about what is to come, this is just the beginning.”
