SushiDog will open its first restaurant outside London in January 2026, with a new site planned for the Bullring shopping centre in Birmingham.The grab-and-go sushi brand, known for its made-to-order rolls and bowls, will occupy an upper-level kiosk with seating for up to 25 customers. The venue will include a dine-in area and takeaway counter aimed at shoppers and commuters.
Since launching in London, SushiDog has built a following for its fresh ingredients and customisable menu options, offering burrito-style sushi rolls, bowls and salads prepared to order.
It currently operates several London sites, including locations in Covent Garden and Soho.
Co-founder Greg Ilsen said the expansion marked a milestone for the business.
He said: “We’re excited to bring SushiDog to Birmingham and introduce the concept to the city’s vibrant, creative community. Bullring’s right at the heart of the city, always lively, full of energy, and packed with people who love fresh, fun food – and SushiDog feels like a perfect fit.”
Paul O’Brien, director of leasing and commercialisation at Hammerson, which owns Bullring and Grand Central, added: “Bullring and Grand Central is in huge demand from the best food and drink operators, and SushiDog’s first location outside of London perfectly reflects the appetite we see from operators seeking a landmark presence in the UK’s fastest growing city.”
