Chef Rafael Cagali will open a new restaurant, Marea, in Hove on 10 September, working with his partner Charlie Lee and head chef Ewan Waller.

The Church Road venue will seat 38 diners and aims to combine seasonal Sussex produce with Cagali’s Brazilian-Italian influences. The menu will sit between the chef’s east London restaurant Da Terra, which holds two Michelin stars, and the more relaxed Elis, also in London.

Waller, described as Cagali’s protégé, will lead the kitchen. Dishes will include fried oyster with hot sauce emulsion, lobster rice with dendê emulsion, and pumpkin ravioli with courgette and jalapeño. Guests will also be able to choose a tasting menu, the “chef’s selection”, curated by Cagali and Waller.

The wine list will feature Old and New World producers, alongside premium English wines from estates including Rathfinny and Langham. The restaurant said it would emphasise “sustainability and quality” by sourcing from nearby farms, fisheries and artisanal suppliers.

The interior is designed with muted tones and wooden flooring, offset by brightly coloured artwork from Brazilian artists. A central bar with leather stools will offer drinks and small plates as well as full meals.

Cagali said: “Marea is a concept that truly excites me. It’s about bringing the highest quality ingredients and innovative techniques to a setting that feels welcoming and accessible. We want guests to experience exceptional food in a convivial atmosphere – a place where they can feel at home while exploring new flavours.

Brighton and Hove truly excites me too – the town appreciates quality ingredients, and a healthy independent restaurant culture has grown in recent years. I’m ambitious with Marea – I want it to become one of the most highly respected and beloved in the region.”
