Silo, a zero-waste restaurant which will see a continually changing menu of ten to fifteen dishes,has announced it will be opening its second property in London on 5 November. 

Owned by award-winning chef, Douglas McMaster, will join Crate Brewery,at The White Building in Hackney Wick. “A zero-waste pioneer,” the restaurant aims to “close the loop” in the food production process by “trading directly with farmers to composing any leftover scraps into compost.”

According to brand it is the “world’s first” zero-waste restaurant, and its original premises was opened by Douglas McMaster in 2014 in Brighton.

Situated on the upper floor of The White Building, Silo’s interiors have been designed by Nina Woofcroft, who is best known for focus on sustainable design. 

McMaster said: “I’m thrilled to be joining the team and opening Silo in London, it will of course be the same philosophy with sustainability at the forefront but we’re constantly raising the bar when it comes to up-cycling and zero waste. So more exciting developments to come”

Together under one roof, Crate Brewery and Silo will “work together to bring Douglas’ vision of a sustainable ecosystem to all areas of The White Building.” The new design will be equipped with a new events space next door to the  restaurant, for workshops to be taken place, hosted by McMaster. 

Tom Seaton, co-founder of Crate Brewery, added: “We are so excited to be embarking on this new chapter in CRATE’s story with Dough and Silo, and ensure that sustainability and creativity thrives throughout all areas of business.”
