Kindle, a new sustainability-focused independent restaurant, will open in Cardiff city centre at the beginning of next month.

The restaurant announced an opening date of 2 September on its instagram page.
It will be the latest venture from Phill and Deb Lewis, the couple behind Dusty’s pizzerias in South Wales, and Nook bistro, also in Cardiff.

The opening comes after a successful kickstarter campaign, which raised £43000 to kickstart the transformation of its location, previously an abandoned building.

An exclusive menu testing experience will take place on 31 August for those who pledged.
The head chef will be Tom Powell, who formerly headed up the kitchen of the Walnut Tree in Monmouthshire. He will lead the kitchen team, creating seasonal menus that will also make the most of the on-site kitchen garden and greenhouse.

The instagram announcement read: “It feels like such a monumental achievement to be able to make this announcement after everything the last few years has thrown at us.”
