Restaurateur Roberto Costa, founder of restaurant group Macellaio RC, will be opening Fish Game in Canary Wharf, London, on 10 July.  

The restaurant will put ultra-seasonal, sustainable British ingredients “centre stage” with a pared-back seasonal changing menu of the UK’s best game and fish. 

Executive head chef, Matthew Colk, who was previously in the kitchen at The Roast and The Gun Pub, has worked closely alongside Costa  to bring Fish Game.

The menu will feature dishes such as rabbit coquettes with marjoram mayonnaise and lemon zest, native oysters, crab and pork bao with curry sauce, tigella bread with offal, and wild trout on toast with cucumber, among many other mains.  

According to Costa, Fish Game is a “departure from all-Italian Macellaio”, but the restaurant will still maintain his ethos of cooking simple and authentic dishes at the core of his new concept. 

In addition, the restaurant will have a tequila bar where aperitivo will be served daily to bring “a touch of Italy” to London. The wine list menu will also include some of the finest wines worldwide, both old and new, with a large focus on small artisan producers.  

Samuele Lombardi, the head bartender, will also be serving classic cocktails with a twist. As well as fronting an exciting collaboration with El Camion tequila, offering a selection of different tequilas and Mezcal. 

Roberto Costa, owner and founder of Macellaio RC, said: “Fish and Game represent the most important elements for us – sea and sky – brought together by fire in our brand-new concept. The restaurant will have a romantic atmosphere, with a high focus on sustainability, where the choice of wild animals goes according to the season, and everything is sourced carefully in the UK. 

“Quality has no boundaries, and as an Italian restaurateur who has always been working with Italian products since the beginning of my career, since I came to the UK, I fell in love with the land, and I want to bring to my guests table the best English products.”
