Chef Adam Handling has announced that he has opened his first venture outside of London with the Cornish bar and restaurant Ugly Butterfly.

Based on the seafront in Carbis Bay, the bar follows in the footsteps of Handling’s flagship Eve Bar.

The Ugly Butterfly’s bar uses cocktail ingredients which have been locally sourced, with sustainability playing a larger role throughout the new site.

To minimise waste, no lemons or limes will feature in the drinks, with the team using other methods or ingredients instead.

Drinks on the menu include a Conish take on a dry martini, The Fal-Town, created by infusing shucked oyster shells, Ketel One Vodka, samphire and seaweed from the Cornish coast.

Handling started out at Gleneagles 16 years ago where he was the first apprentice chef, before he went on to become Fairmont’s head chef.
