Browns to open first Hertfordshire restaurant  

Mitchells and Butlers will open a new Browns Brasserie and Bar in Bushey, Hertfordshire, on 28 November as part of the brand’s plan to grow its presence in suburban high streets. The launch brings the chain to 28 sites across the UK.The restaurant, on High Road, occupies a Grade II listed building that dates to the 1600s. It has undergone a £1.7m refurbishment blending retained period features with Browns’ contemporary design.

The opening coincides with the rollout of the brand’s festive menu. Browns Bushey will serve breakfast through to dinner, with a focus on seasonal British dishes. Daily brunch will be available and afternoon tea will be served from Monday to Saturday. The Sunday offer will include a range of roast options.

Its drinks list includes Champagne cocktails, updated classic serves, a wine selection and low- and no-alcohol choices. Vegan, vegetarian and gluten-free dishes will also be available; the gluten-free menu is accredited by Coeliac UK.

Operations director Dave Lewis said: “Bushey marks an important step in our strategy to grow Browns’ presence in suburban locations where we see strong demand for premium all-day dining on the high street. We’ve invested carefully in restoring this historic building and we’re looking forward to becoming part of the local community as we continue to expand the brand in key neighbourhood markets.”

Browns’ existing estate spans cities including London, Bath, Birmingham, Bristol, Manchester, Leeds, Liverpool, Sheffield, Edinburgh and Glasgow. The Bushey site is the brand’s first in Hertfordshire.
