London’s new farm has announced the opening of The Pig’s Head in Clapham’s historic Old Town on 8 November.

The pub will offer a 60 cover bar area with a daily-changing menu as well as a “spacious” 40 cover dining room with an open plan farmhouse kitchen for lunches and dinners from farm to fork menu.

The Pig’s Head said it will provide a sustainability-first approach, with all meat to be butchered on site using “whole animals” to reduce wastage and emissions.

The pub’s menu will include rock oyster ‘hot pot’ with lamb sauce and confit potato, as well as chicken leg with cauliflower and bacon crisps, with vegan and vegetarian dishes to be included from baked bean’ terrine, to squash, kale and pumpkin seed ‘ricotta’.

The pub will also offer “sustainable spirits”, made by small-batch producers who are also doing their bit to minimise their mark on the environment.

Scott and Maria Hunter, co-owners, said: ” It’s a great site and Clapham Old Town has the vibrant village vibe that we were looking for. We firmly believe the future of sustainability rests on not persuading people to become vegan but for people to eat much less meat and fish and for this meat and fish to be of a very high quality.”

They added: “That’s why we source whole native animals from local farms with outstanding husbandry and, as with Smokehouse and The Pig and Butcher, we will butcher in house. We can’t wait to open the doors and see what people make of it.”
