New restaurant Prime by Pasture is set to open in Bristol on 9 June by chef and restaurateur Sam Elliott.

The new all-day dining restaurant will open on St Thomas Street in the heart of the city’s Redcliffe Quarter.

Building on the success of the Pasture Restaurants, Prime by Pasture will bring a “fresh take” on everyday dining – from coffee and stacked breakfasts in the morning, to burgers, wings, and shakes throughout the day.

Following the success of Pasture Bristol, which opened in 2018, and Radius, which opened in 2022, Prime by Pasture will be Elliott’s third venture in Bristol. In Cardiff he also operates Pasture Cardiff which opened in 2020, along with Parallel and Nightshade which both opened in 2023. In 2024, he also opened Pasture Birmingham, the group’s biggest site to date.

The opening of Prime by Pasture Bristol marks another milestone for the restaurant group, which has already gained a following for its dedication to “exceptional” food, ethical sourcing, and butchery, and will coincide with a refurbishment of the original Pasture Bristol restaurant.

Prime by Pasture Bristol will feature an on-site butchery and deli, allowing guests to enjoy top-quality beef both at the restaurant and at home. The butchery will offer Pasture steaks, house-made sausages, bacon, and pork belly, while the deli will stock fresh ingredients and artisan products. A takeaway service will also be available, managed entirely in-house.

Staying true to Pasture’s roots, Prime by Pasture Bristol will champion grass-fed, ethically reared beef, sourced in partnership with Philip Warren and farms across the South West and Wales.

Elliott said: “We first announced that we would be bringing Prime by Pasture to the city at the beginning of last year – but with the Birmingham opening to manage, plans got delayed. We’re now thrilled to be putting our attention back onto Bristol, going full steam ahead with getting the doors to Prime by Pasture open as soon as possible.”
