1215, the restaurant at Fairmont Windsor Park, has announced the appointment of Tim Sheed as its head chef

It is reported that he brings a “dynamic” perspective and accomplished skill set and will lead the team and oversee the menu at the hotel’s fine dining restaurant. 

Sheed gained his culinary experience in some of the country’s finest luxury hotels and restaurants. Most recently, he held the role of sous chef at The Tudor Room Great Fosters Hotel, helping the team achieve one Michelin star just months after reopening. 

The restaurant is reportedly set on Fairmont Windsor Park’s south lawn overlooking the private terrace and manicured gardens. It serves authentic, high-quality British cuisine, using only the “finest, locally grown” produce from The Royal Farms, Windsor artisans and the hotel’s own kitchen gardens. 

In addition, it obtained its name from the Magna Carta, which was signed nearby in the grounds of Runnymede in 1215. 

Sheed said: “I’m delighted to be leading the 1215 team at Fairmont Windsor Park and taking the fine dining offering to the next level. I want our guests to enjoy a meal that has a sense of familiarity, but through creative execution and exemplary customer service, is able to delight and leave lasting impressions.”
