Chef co-owner of Trullo, Conor Gadd, will open a new restaurant, Burro, in Covent Garden on 11 March.
The launch follows a three-day soft launch from 6 to 8 March, where the business will offer a 50% discount on food for lunch and dinner bookings.
The venue is the first solo venture for Gadd, who has operated the Islington restaurant Trullo for 16 years. Located in central London, the space includes a dining room and a courtyard designed by Lisa Helmanis of DAY Studio.
The menu focuses on Italian produce and British ingredients. Antipasti options include house-made focaccia, Venetian chicken livers on toast, and cuttlefish stuffed with breadcrumbs. Main courses feature fresh pasta rolled daily, including tagliatelle with a five-hour slow-cooked duck ragù and fettuccine alfredo with 36-month-aged Parmigiano Reggiano.
The kitchen team will also serve secondi dishes such as Vitello al burro and Dover sole with prosecco and caviar. Desserts include tiramisu doughnuts and almond cake served with Marsala wine.
Sommelier William Amherst has curated a wine list of 200 to 300 bottles. The selection focuses on the Piedmont and Tuscany regions, featuring producers such as Montevertine and Fontodi. The bar will also serve traditional cocktails including negronis and spirits alongside Italian brandies and vermouths.
Gadd said: “Never in my wildest dreams did I imagine opening a restaurant in Covent Garden. But as soon as I saw the room – and the courtyard – I knew it was an opportunity I couldn’t miss. It’s been a labour of love with a brilliant team, and we can’t wait to welcome guests with some amazing food served in the warmest, most elegant of rooms.”
