Herts Pubs Company to open debut venue in Hitchin

Located on Hitchin High Street, The Cock has undergone a renovation intended to preserve its heritage features while introducing contemporary design

Newly-formed hospitality group, Herts Pubs Company, is set to open its first venue, The Cock, in Hitchin later this month on 25 July, following a refurbishment of a 450-year-old coaching inn.

The venue includes a 46-cover dining room, a 15-cover private dining space, a lounge and bar with oak-topped counter, and a patio garden. 

Operations manager Adam Msetfi, who has worked at Auberge Du Lac in Welwyn, the White Hart in Welwyn and the Tilbury in Datchworth, will lead the venue, while head chef Alex Corley, who was previously at three AA rosette restaurant Thompson in St Albans and with experience at Gordon Ramsay’s Savoy Grill and Petrus, will run the kitchen.

The pub will offer all-day dining with menus focused on British suppliers. Meat will come from family butchers Aubrey Allen, with seafood from Cornish Flying Fish and Scottish supplier Keltic Seafare.

Msetfi said: “We have been hard at work creating a premium pub offer rooted in quality British produce, designed to serve the local community while also appealing to visitors from further afield.”
