A new rooftop restaurant, TT, is set to open on 22 March in London

Led by ex-Oren head chef, Sam Lone, fire-cooked seasonal produce is the focus, with smoking, pickling and baking featuring heavily across the sharing menu.

Food will be served across two floors in the newly-renovated rooftop and bright, brand new ground floor restaurant both for lunchtime and dinner.

The ground-floor restaurant will mirror the refurbished rooftop complete with retractable roof and windows. The floor to ceiling shop front window allows natural light and greenery “to bring the outside in”. The interiors incorporate oak and hardwood found throughout TT, alongside Parisian-style fittings.

Despite being just 28 years old, head chef Lone has a lot of kitchen experience. He moved to London to train under an ex-Gordon Ramsay alumni at Cabotte before moving onto The Palomar and then Two Lights. Local restaurant Oren was next, where he quickly worked his way up to head chef.

Lone’s extensive experience at Oren, The Palomar and Cabotte, along with TT’s rooftop focal point means the menu is naturally designed around an outdoor grill. The newly installed outdoor kitchen is equipped with a bespoke Asado-style grill and wood fired oven.

TT’s food champions seasonal, quality produce, with the menu and specials changing regularly. Snacks to whet the appetite include smoked ox cheek croquettes, house pickles and focaccia with hummus for mopping.

Main dishes include dry-aged ribeye with chimichurri, lamb shoulder a la plancha with roasted garlic yoghurt, barbecued mackerel with pickled chilli hot sauce, flame-grilled squid, oyster mushrooms, barbecued chicken thighs. Vegetable options include golden beetroot, roasted pumpkin and a smoked cauliflower cheese.

A selection of desserts will offer barbecued pineapple with whipped cheesecake and white chocolate, and warm brownie and creme fraiche.

A multifaceted venue, TT’s unconventional building was once a Victorian police station. Since 2017, TT Liquor has been a cocktail bar, with a steadfast view to expand into food.
