Chef Anthony Demetre has announced he will open his Wild Honey restaurant in London’s St James’s area after its original site in Mayfair closed in February.

The restaurant will be located inside the Sofitel St James’s hotel and will be headed up by Simon Woodrow, who says he is aiming to evolve the restaurant’s offering, whilst looking to maintain the “contemporary” French style Wild Honey has become known for.

Wild Honey’s new restaurant is expected to feature a menu which includes smoked eel and rillettes, bouillabaisse, slow-cooked and crisp tripe with sweet spice, along with dishes such as Tarte Tropezienne and custard tart for dessert.

Demetre’s original Mayfair site went on the market in January before closing its doors in February. At the time of going to market it was thought that the Mayfair site commanded a yearly rent of £103,000.
