Sticks’n’Sushi to debut Scottish restaurant in Glasgow

Danish restaurant group Sticks’n’Sushi will open its first Scottish restaurant in Glasgow this November, expanding its portfolio to 31 sites across Denmark, the UK and Germany.

The restaurant, located on George Square, will have a 177-cover dining room and bar. Designed by Danish practice OEO Studio, known for its work on Noma Kyoto, the interiors are influenced by Japanese architectural principles and Scandinavian design, with a focus on texture, warmth and understated elegance.

The menu will include Sticks’n’Sushi’s signature sharing dishes, sushi, sashimi and grilled items, offered à la carte or as curated set menus. Dishes will include beef tataki with miso aioli, truffle ponzu and artichoke crisps; a “Temaki Setto” of do-it-yourself rolls with lobster, wagyu tartare and avocado; miso-glazed black cod; grilled duck with egg yolk in soy; and lamb with garlic butter, spring onion and soy sesame.

The bar will serve sake, Japanese teas, cocktails, premium spirits, beer – including a Sticks’n’Sushi own-label – and a wine list designed to complement the food menu.

Sticks’n’Sushi was founded in Copenhagen by brothers Jens and Kim Rahbek and Thor Anderson. The group operates 12 restaurants in and around Copenhagen, 15 in the UK and three in Berlin.
