Hospitality group Noble Inns is set to open Bistro Sablé, a new French bistro in Islington, on 3 November.
The restaurant occupies the former Smokehouse site at 63–69 Canonbury Road and joins the group’s portfolio, which includes the Pig and Butcher and the Princess of Shoreditch.
The 65-cover venue will feature a bar area at the entrance and a main dining space centred around an open kitchen.
The interior blends white tablecloths, bistro-style chairs, and banquette seating with vintage French details sourced from Paris flea markets, including copper pans and original signage.
Bistro Sablé will serve a concise menu of traditional French dishes. Sunday service will include roast options such as pork, lamb, beef or chicken, served with trimmings.
The wine list, curated by former Mere sommelier Alex Froslet, will offer a predominantly French selection available by the glass, carafe, or bottle. The drinks menu will also include cocktails, champagne, craft beers, and classic bar options.
Additionally, outdoor seating at the front of the restaurant will provide a year-round space for dining and drinks, with shade in summer and heaters during cooler months.
Bistro Sablé opens as part of Noble Inns’ continued investment in its Islington sites.
