Wonton Charlie’s, a new 18-seat noodle bar inspired by Hong Kong’s wonton soup culture, is set to open in London Fields on 7 November. 

The restaurant will focus on a single dish: wonton noodle soup, and will offer bowls of handmade noodles and housemade wontons in either chicken or fish broth. Diners can choose from prawn, pork or fish skin wontons, with options to add fish balls or order noodles “lo mein”-style, tossed in soy, ginger and garlic dressing.

Every element of the dish will be made on site, from the egg noodles to the slow-cooked broths. The chicken broth will be made from roasted chicken with ginger, spring onion and dried shrimp, while the fish broth will use fish bones, sesame oil and flounder powder, a common ingredient in Hong Kong noodle soups.

The walk-in-only restaurant aims to replicate the energy and efficiency of Hong Kong’s noodle bars, serving drinks such as sour plum tea and local beers alongside snacks of crispy fish skins.

Frank Yeung, co-founder of 6 of 1, said: “It felt important to give the dish the same level of respect it’s given across the city, so we have worked hard to make sure every element can be made in house, to achieve that same obsessive level of attention and delicious outcome.”
