The Evolv Collection has announced two new openings as part of its Chop House and Tavern rollout, with a London site launching today (18 November) and a New York venue due early next year.
The move follows the September opening of the Liverpool Street Chop House and Tavern, which the group said had strengthened demand for a more casual offer alongside its full-service restaurants.
According to chief executive Martin Williams, the new sites marked a planned extension of the brand. He said the taverns were intended to provide accessible drinking and dining spaces that sit alongside the company’s Chop House restaurants.
Paternoster Tavern will open in a Grade II-listed former bank building at 47 Ludgate Hill in St Paul’s. The space has been restored in line with Sir Terence Conran’s design principles, with dark wood, deep red and blue tones, and brass and gold detailing.
The venue includes a lower-ground area for 50 to 60 guests designed for private events and club gatherings. The group said the space would add to hospitality options in the City.
Both Paternoster Tavern and the forthcoming Queens Tavern in Hudson Yards will serve the elevated bar menu introduced at Liverpool Street. The offer features three pies – British beef and red wine, free-range chicken and leek, and forest mushroom and asparagus – as well as classic sandwiches such as salt beef on malted rye, Welsh rarebit, ploughman’s and the Chop House and Tavern club.
Queens Tavern, at 20 Hudson Yards, will become the group’s third New York site when it opens in early 2026. Further details of the US launch are expected nearer the time.
Williams said: “The Tavern concept is the natural evolution of our brand vision. Following the tremendous reception to Liverpool Street, we’re expanding the more casual, pub-style tavern experience to sit alongside our Chop Houses.
“Think of the taverns as the little brothers of our Chop Houses. They capture the same spirit of conviviality and heritage, but with a lighter touch.”
