Brown’s Hotel in Mayfair has appointed Adam Byatt, chef-owner of Michelin-starred restaurant Trinity in Clapham, as chef director of food and beverage, effective 9 September.

The hotel said it will “embrace the ongoing evolution of British Cuisine” with a new menu that focuses on contemporary British cooking complemented by European influences.

Located on Albemarle Street in Mayfair, London, the property originally opened its doors in 1837, and claims to be home to the capital’s first public dining room.

A statement by Brown’s Hotel read: “Adam will continue his role as chef proprietor of Michelin starred Trinity restaurant in Clapham in London, as well as Upstairs at Trinity and his British Neighbourhood Bistro, Bistro Union. Byatt is a true lover of food, authenticity and an ambassador of British ingredients and quality.

“Byatt and Brown’s possess a natural synergy and eagerly look forward to an exciting culinary journey ahead.”
