BaxterStorey has secured a new contract with London Metropolitan University and will see it cater for its Aldgate and Holloway campuses to around 13,500 students.
In addition to transforming its four locations, BaxterStorey will reopen the Highbury Canteen by revamping it into a street food market.
Dishes on the new menu include tofu katsu curry with sticky rice and kimchi slaw, roasted vegetable gnocchi, and loaded Turkish chicken flatbreads with hummus, minted yoghurt and sweet chilli.
BaxterStorey are also tasked with revamping the hospitality services to shine a light on the university’s event space.
As part of the contract, BaxterStorey has worked with suppliers to create a carbon neutral wine list, with menus to include Toast ale made from surplus bread, social enterprise Nemi teas, a range of social enterprise confectionery and snacks, and regeneratively grown WildFarmed pasta.
To start the transformation process, the caterer has already activated its 17 onsite staff and the whole team will also receive hands-on training from expert roasters, Extract in Bermondsey.
Wellness and nutrition gurus, Andy Aston and Lizzie Hennig have teamed up with hospitality services manager Daniel Caleb to create a campus wellness programme, working with this year’s dietetics students on a placement aimed to enhance the food offer to students.
All outlets will open on Monday, 11 September in time for the academic year.
Sarah Miller, managing director at BaxterStorey, said: “We are delighted to be developing a partnership with London Metropolitan University. They have a long-standing culture of enhancing the student experience through sustainable initiatives, people development and a strong community focus – these values are all absolutely in tune with ours.”
