Cornish Bakery will be debuting its first site in Wales, in Betws-y-Coed, as part of its latest plan to open six new branches by May 2026.
News comes as the company is investing £3.5m in the new bakeries and a further £500k to refurbish existing branches in West Bay, Lyme Regis, Ambleside and Bourton on the Water.
New locations in Newbury and Lincoln will open in March, followed by Betws-y-Coed, Gunwharf Quays and Wells in April, and Witney in May.
The Betws-y-Coed branch is expected to be the largest property in the group’s portfolio, and will also launch the ‘RISE by Cornish Bakery’ brand extension in North Wales.
The RISE concept will also feature at the relocated two-storey Gunwharf Quays site. These licensed bakeries will offer small plates for brunch and evening dining.
The new concept sites will include alcoholic beverages from Harbour Brewery and Camel Valley Vineyard. Some locations will span 3,500 square feet and 196 covers.
According to the independent chain, each bakery is designed with unique interiors intended to reflect the heritage and community of the local area, according to the company.
Mat Finch, managing director of Cornish Bakery, said: “2026 is set to be quite the year for us. We’re already punching through record takings and profit figures week-on-week and are pleased to announce the locations for our next six beautifully bespoke bakeries.
“These will all be open by May, and we have many more already in planning that we’ll also be announcing asap. Alongside these openings, we are also unveiling the significant refurbishment of four existing bakeries, and holding strong to our design-driven commitment to individually shape each and every bakery with a unique interior and exterior scheme and vision that reflects its building, its history and the community it serves.”
