Cavita partners with Mexican chefs for new chef night series

Adriana Cavita has announced a series of chef nights at her London-based restaurant Cavita in partnership with some of her favourite Mexican restaurants from across Europe and Mexico.

This will include partnerships with Hugo Soto (21-25 February) and Thalia Barrios Garcia (4-5 March). 

Cavita said the dinners will “celebrate the incredible variation in cuisine and traditional practices across Mexico from Oaxaca to Zacatecas and beyond, different yet akin to her own”. 

The first event will see Hugo Soto of Cosecha Taller in Zacatecas visit Cavita to cook a one-off menu in his style.

Soto has worked at some top restaurants after an internship in San Sebastian under Martin Berasategui, including Dany Garcia’s Manzanilla and Michelin-starred Brooklyn restaurant run by Chef Fredrik Berselius, Aska. He later moved back to Zacatecas to open his own restaurant – Cosecha Taller de Cocina. 

The food is described as “hyper local and seasonal”, and dishes from the menu will include Wild sea bass ceviché cured with árbol chile sauce and dried prawns and Gordita de chile relleno – a poblano chile and cheese gordita with Zacatecas-style red rice. 

The second event in March sees Cavita welcome Thalia Barrios Garcia from Levadura de Olla in Oaxaca. Born and raised in Mexico, Barrios Garcia is a traditional female cook from San Mateo Yucuntidoó, Oaxaca. She was taught to cook by her grandmother as a child, learning traditional rituals and practices around Mexican staples. 

At the age of 26, she became the owner and head cook of Levadura de Olla in 2020, a project focused on representing dishes of her community, preserving Oaxacan gastronomy and promoting local commerce. 

Further events at Cavita and Thalia’s menu will be announced later this month. All menus will be priced at £78 per person for a set four course dinner, tables can be reserved via the Cavita bookings platform.  

Cavita, on Marylebone’s Wigmore Street, opened g in May 2022 and serves Cavita’s takes on traditional Mexican dishes that “tell a story of her heritage and the people who taught her the craft of cooking”.
