Olive+Squash open new London site
Sustainable lunch spot olive+squash has announced the launch of its second site in Chancery Lane.
The opening comes three years after the launch of their inaugural site opposite Monument Station.
The latest New Street Square site will offer ethical and bespoke salads, wraps and soups, all made from sustainable and locally-sourced ingredients.
Dishes are prepared fresh on-site every morning, and specials will include burrata and sweet potato salad, portobello bowl, grilled chicken and peppered lentils, as well as seasonal specials like the avocado dreams bowl.
Olive+squash co-founders, Olivia Stolt-Nielsen Meinl and Sofia Bombieri, said their “mission to brighten up Londoners’ lunchtimes places emphasis on preparing seasonal produce in-house, sourced from local farms and ethical producers, in a way that creates minimal waste”.
The brand also said it is “commitment to sustainability” is reflected in the design of the site. The new space features a locally sourced timber roof, made without glue, and over 90% of the building materials were sustainably sourced and produced close to London.
The site will use a mix of recycled and compostable packaging, and feature a fresh produce area where customers can buy seasonal fruits and vegetables with plastic-free packaging.
Water refill stations will also be available at the new site.
Olive+Squash said: “Every step of their food’s journey to and away from customers has been consciously considered, from sourcing, preparation and take-away packaging.”
