Fine-dining restaurant Latymer, based at the five-star Pennyhill Park hotel in Surrey, has retained its four-AA rosette status.
The award comes shortly after the establishment appointed Steve Smith as head chef.
Smith made an immediate impact by changing the menu layout at the restaurant, introducing a “Discovery Tasting Menu” for lunch and dinner.
The changes include a seasonally dependent surprise element, which allows the kitchen team to provide the guests with “the best ingredients available at any given moment”.
Graham Copeman, general manager of Pennyhill Park, said: “We are delighted that Steve’s outstanding commitment to showcasing seasonal produce in a gastronomic manner has already been recognised through his four AA rosette win, so soon after joining us here at Pennyhill Park.
“We feel that Steve’s philosophies align with those of the hotel and I look forward to a fruitful relationship working together.”
Smith joined the restaurant from the Michelin-starred Bohemia at The Club Hotel & Spa in Jersey. During his seven years at the restaurant he earned five AA rosettes and retained the establishment’s Michelin star.
Speaking on his appointment, he said: “I’m incredibly excited to have joined Latymer – Pennyhill Park already has such a fantastic reputation and I look forward to further developing my cuisine and therefore the restaurant.
“Guests can expect a dining experience that is flavour and texture driven, as we explore various techniques and flavour combinations in order to showcase the remarkable seasonal produce we have available to us.”
