Dorchester Collection\u2019s iconic British hotel, The Dorchester, has announced its first executive chef appointment in over two decades, as Stefan Trepp takes the helm.\r\n\r\n\r\n\r\nTrepp follows an alumni of ]executive chefs including; Jean Baptiste Virlogeux who launched the hotel\u2019s Chef\u2019s Table in the 1940s, Eugene Kaufler, Anton Mosimann, Willi Elsener, and Henry Brosi who held the position for over 20 years.\r\n\r\nTrepp will oversee a brigade of more than 100 chefs within The Dorchester\u2019s six kitchens serving; The Grill, The Promenade, The Bar, coffee shop Parcaf\u00e9, Private Dining and Events, in-room dining and The Spatisserie at The Dorchester Spa. He plans to focus heavily on sustainable food practices, introducing innovative ways to source produce and further minimise and avoid waste.\r\n\r\nMoving to London with his wife and baby daughter, Trepp brings 21 years of experience to the role. Inspired by flavours from all over the world, his cooking demonstrates an emphasis on traditional recipes and quality of ingredients. This will translate to menus adapting to every special occasion and guest requirement, including personally creating bespoke menus for culinary masterclasses at the Chef\u2019s Table.\r\n\r\nTrepp said: \u201cIt fills me with pride to be part of such an historic institution. As a leader in luxury hospitality for more than 88 years, the hotel requires an executive chef who can deliver to our exceptional standards, while also bringing innovation and creativity to lead the hotel into the future.\u201d\r\n\r\nTrepp joins The Dorchester from executive chef roles at Banyan Tree Resort Phuket, Mandarin Oriental Bangkok, Emirates Palace Abu Dhabi, and Kempinski hotels including the flagship property in the United Arab Emirates. Amongst his accolades, he was named \u2018Schweizer Star Im Ausland\u2019 (Swiss Star Abroad) 2015 by the Swiss Gault and Millau restaurant guide.
