The Noble Inns group has announced the appointment of Ruth Hansom as head chef at The Princess of Shoreditch.
Joining the east London venue, Hansom will be responsible for creating “new and ambitious” tasting menus on the first floor dining room.
She will also be tasked with managing the menu of British pub classings and bar snacks for the site’s downstairs pub.
Prior to taking on the role, Hansom spent five years at the Ritz, where she became the youngest ever female to win the Young National Chef of the Year award.
As head chef, Hansom will run both the 45-cover downstairs pub and 30-cover upstairs dining room, which offers a five or eight-course tasting menu.
While focusing on seasonal British produce to only use ingredients when they are at their best, Hansom’s menus are “all underpinned by her classical French training”.
Her signature dishes include a monthly-rotating, vegetable-flavoured butter, seasonal pastas and souffles, and daily tarts.
