The fifth restaurant by LSL Capital, co-founded by father-daughter duo Samyukta and Dinesh Nair, Mayfair-based Koyn is set to open in September.

Samyukta Nair and Fabled Studio’s Tom Strother have designed the two-storey space to “symbolise the complementary forces at play in Japan’s enigmatic volcano”.

On the round floor is Midori, the green room, and below is Magma, the charred room.

The kitchen, led by executive chef Rhys Cattermoul (formerly of Nobo London and Hong Kong) presents a menu aiming to showcase the Japanese cuisine through locally sourced produce.

Alongside specialist dishes for their sushi bar and robata grill, Koyn will feature plates such as steamed clams ‘nabe’ with cordycep mushroom, yuzu sake soy, spinach and samphire and Red mullet tempura with yuzu kosho tosazu and homemade kombu salt.

It is the latest opening from LSL Capital, which also has MiMi Meifair, Michelin-starred Jamavar, Bombay Bustle and the upcoming Socca, a collaboration with Claude Bosi, in its portfolio.
